The following is a recipe of natural mushroom soup that I was taught by a clerk of “San-raku” of a mushroom specialty shop.

  1. Please immerse in thin salt water for 20 minutes, this is to remove insects just in case. Wipe each mushroom with a damp cloth or with kitchen paper towel and only do this as need to remove dirt and debris.
  2. Gently rinse the saltwater with tap water to remove dirt.
  3. Cut the mushrooms and put it in a boiling pot and boil for a while.
  4. When the pot boils, ash will appear and carefully remove it.
  5. Seasoning is okay with your preference, I seasoned with miso or soy sauce because I am Japanese.

天然のキノコスープの作り方

下記がキノコ専門店の「山楽」の店員さんに教えていただいた天然のキノコ汁のレシピです。

  1. 天然のキノコは石突きを取り、薄い塩水に20分程漬けて念のために虫だしをしてください。
  2. その塩水を水道水で優しくすすぎ、汚れを落とします。
  3. 沸騰した鍋に、キノコを割くか切って入れ、しばらく茹でます。
  4. 再び沸騰したら灰汁が出るので丁寧に取り除きます。
  5. 味付けはあなたのお好みでOKです、私は日本人なので味噌や醤油で味つけしました。
    天然のキノコからは良い出汁がでるので、他の出しや調味料は加える不要です。
    大自然の恵をどうぞご堪能ください。
